The hazy IPA emerges in New England

Vermont brewers produced a soft, low-bitterness, aroma-driven IPA that inverted the West Coast template and became the dominant modern style.

The version you have probably heard

Hazy IPA is simply unfiltered IPA, and the cloudiness is a side effect of not filtering.

The haze is engineered. It comes from specific protein-polyphenol interactions, grain choices and yeast selection, and an unfiltered West Coast IPA does not look or taste like one.

The haze is produced deliberately — hop polyphenols, wheat and oat protein and suspended low-flocculating yeast — rather than being an unfiltered accident.

Why it matters

The most commercially significant new style of the twenty-first century, and the one that made freshness a mainstream consumer concern.
