What the record supports
That, and the part usually left out, which is the more interesting half. Hansen showed that spoiled lager was frequently caused not by bacterial infection — as Pasteur had held — but by wild *yeasts* in the pitching yeast. That diagnosis is why pure culture was the necessary answer, and why better cleaning alone had not worked. He then developed a method for isolating a single cell and growing it into a pure population, and the resulting strain went into production at Carlsberg in 1883. Carlsberg did not patent the method, which is the reason it spread through the industry within a generation rather than remaining one company’s advantage.
Why it matters
Fermentation became repeatable. Every industrial lager brewery in the world depends on this, and so does the possibility of a brewery reproducing its own beer indefinitely rather than living with a drifting house culture.
The decision not to patent is worth dwelling on. A commercially controlled pure-culture method would have given Carlsberg a decisive and durable advantage over every other lager brewer; releasing it instead is why the technique is universal, and it is one of the few genuinely consequential acts of corporate generosity in brewing history.
