American wheat beer

A wheat beer fermented with clean American yeast: soft body and lasting head, without the banana and clove.

The key difference from a German Weissbier is the yeast. American wheat beer uses a neutral ale strain, so it gets the soft body and head retention that wheat provides without the phenolic and estery character. The result is a much more neutral canvas, and it is often hopped noticeably.

Because the yeast contributes almost nothing, everything depends on the wheat and the hops, and a good one uses that clarity deliberately: clean, soft-bodied, with a lasting head and often a citrus hop note that would be lost under Bavarian yeast. A poor one simply tastes like a weak pale ale. It is also the natural base for fruited beer, which is why so many are.

Serve it cold and expect it to be gone quickly — with no yeast phenols and very little malt character, there is nothing in it built to reward slow drinking, and that is the intention rather than a shortcoming. It is the American answer to the same summer question witbier and Weissbier answer differently.

Freshness and storage

American wheat beer shows best within 2–4 months of packaging. After that it declines in quality rather than becoming unsafe.

Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.

  • A delicate beer with a short window. What makes it good is cleanliness and definition, which are the first things to blur.

What changes with time

  • Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

Faults to watch for

  • Chill hazeA temperature-dependent haze from protein and polyphenol binding — cosmetic only, and by definition it clears as the beer warms.
  • DMSA cooked-vegetable note from a malt precursor that a vigorous open boil should have driven off.

How it got here

American wheat beer takes the German grist and deliberately drops the thing that defines the German style: it is fermented with a clean American ale yeast rather than a weizen strain, so there is no clove or banana. What remains is the soft wheat body and a light, neutral base, which is why it became a common brewpub summer beer from the 1980s.
