Commercial category. A marketing or shorthand term that behaves like a style. Useful for finding beer; treat its boundaries as loose.

Pastry stout is a commercial category rather than a codified style, and its boundaries are set by what brewers add rather than by any process definition. Common additions are lactose, vanilla, cacao nibs, coffee, coconut and fruit purée.

Lactose is usual, which makes most examples unsuitable for vegans and for anyone avoiding lactose — worth checking, since labelling varies.

The useful question is whether there is a beer underneath the additions. A good one has a genuinely well-made stout doing the work and the adjuncts adding a top note; a poor one uses sweetness and vanilla to cover a thin or harsh base, which the sugar hides for about half a glass. Share it — almost none of these are beers to drink a whole measure of alone.

Freshness and storage

Pastry stout shows best within 6–24 months of packaging. After that it declines in quality rather than becoming unsafe.

Tolerates age. Keeps well without getting better. Useful if you are stocking a cellar and want something that will still be right in a year.

  • The base beer is strong enough to keep for years; the adjuncts that define the style are not. Vanilla, coffee and fruit character fade well before the underlying stout has finished developing, so a three-year-old pastry stout is usually a decent imperial stout with the dessert notes worn off.
  • At around 10.0% with substantial roast and malt depth, there is enough structure to turn slow oxidation into dried-fruit and sherry character rather than into cardboard.

The base beer is strong enough to keep for years; the adjuncts that define the style are not. Vanilla, coffee and fruit character fade well before the underlying stout has finished developing, so a three-year-old pastry stout is usually a decent imperial stout with the dessert notes worn off.

What changes with time

  • Oxidation. Reaction with oxygen, producing wet cardboard and sherry notes in pale beer and dark-fruit depth in strong dark beer. Months to years, depending on packaged oxygen and temperature.
  • Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

  • RoastingTake malt or raw grain to high temperature in a rotating drum to produce the deep colours and roast flavours of porter, stout and dark lager.

What BeerHQ knows about this, and how. Every statement carries the state of the evidence behind it rather than being presented flatly as fact.

  • On Unintended sweetness

    The temperature at which beta-amylase stops working is genuinely unsettled, and the round numbers repeated in brewing guidance sit between two incompatible sets of published figures.

    The long-standing figures, tabulated in the review, put beta-amylase’s temperature optimum at 55–65 °C and its inactivation at 74 °C.

    Recent work the review cites puts the optimum far lower, between 45 °C and 50 °C, with inactivation beginning at 52.5 °C and only 10% of activity remaining after 3.4 minutes at 60 °C.

    The review sets both out without resolving them. The practical guidance a brewer acts on — mash cool for a dry beer, warm for a full one — is unaffected either way, which is why the disagreement has survived; but a specific inactivation temperature is not something BeerHQ can state.

  • On Gushing

    Gushing-inducing hydrophobins are surface-active proteins that most filamentous fungi produce to grow across a liquid-air interface, and they reach the brewhouse when excessive fungal growth occurs on the grain either before harvest or in storage.

    Gushing has two unrelated causes: excess package pressure from continued fermentation, and hydrophobin proteins produced by Fusarium mould on barley in the field, which survive the entire brewing process.

    Above about 72 °C no further fermentable sugar is produced in the mash: alpha-amylase continues to break starch down but only into dextrins, which yeast cannot ferment and which remain in the finished beer as body and sweetness.
