Baltic porter is the one member of the porter family that is normally a lager. Baltic brewers reproduced imported English porter using the cold-fermentation capability they already had, and the result is a strong dark beer with none of the fusel heat that warm fermentation at 8–9% would produce.

The character sits between an imperial stout and a doppelbock: substantial roast, but rounder and sweeter than a stout, with pronounced dark fruit.

That cold fermentation at high gravity is the technical difficulty and the source of the style's character. A good one shows dark fruit, liquorice and gentle roast with a clean lager finish and no harshness — heavy on the palate but far less rugged than an imperial stout of similar strength.

Freshness and storage

Baltic porter is typically at its best 12–48 months after packaging, and time is working for it rather than against it.

Rewards age. Given cool, dark, upright storage this develops depth most drinkers would call an improvement. Buy two and compare.

What changes with time

  • Oxidation. Reaction with oxygen, producing wet cardboard and sherry notes in pale beer and dark-fruit depth in strong dark beer. Months to years, depending on packaged oxygen and temperature.
  • Deliberate ageing. Keeping a beer on purpose, accepting some oxidation because of what it develops in return. One to ten years for suitable styles. Most beer is not suitable.
  • Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

Faults to watch for

How it got here

Strong porter was exported from Britain to the Baltic ports in quantity, and brewers in Poland, the Baltic states and Scandinavia began brewing their own versions rather than importing it.

The decisive change was fermentation. As lager brewing spread across the region, Baltic porter was re-made with lager yeast and cold conditioning, which strips out the fruity esters an ale yeast would give and leaves the dark malt and the strength exposed. It is the reason the style tastes smooth and clean at strengths where an ale would taste hot.

Common misconceptions

Porter and stout are always ales.

Baltic porter is normally fermented with lager yeast and cold-conditioned, which is what gives it a smoothness the strength would otherwise fight. Dark colour comes from roasted malt and says nothing about which yeast was used or at what temperature — Schwarzbier, Munich Dunkel and Baltic porter are all dark and all bottom-fermented.

How it is made

The steps that shape this style in particular, rather than the ones every beer goes through.

  • RoastingTake malt or raw grain to high temperature in a rotating drum to produce the deep colours and roast flavours of porter, stout and dark lager.
  • Diacetyl restRaise a fermentation’s temperature near its end so the yeast reabsorbs and reduces the diacetyl it produced earlier.
  • LageringStore beer cold for an extended period after fermentation to clarify it and produce the clean, rounded character lagers are named for.
