Australian sparkling ale is a survival. It is a warm-fermented ale from a country that went almost entirely to lager, carrying high carbonation, a firm bitterness and a distinctive fruity yeast character that persists because the same culture has been used continuously for well over a century.

It is traditionally bottle-conditioned and poured to rouse the sediment, which changes it substantially — clear it is crisp and dry, cloudy it is fuller and more estery. Both are correct, and which one you get is a matter of local habit rather than of the beer being served wrongly.

Whether to rouse the yeast is a genuine choice rather than a mistake in either direction, and it is worth trying both from the same bottle: pour two-thirds clear, taste, then swirl and pour the rest. The difference is larger than most drinkers expect, and it is the clearest available demonstration of what suspended yeast actually contributes.

Freshness and storage

Australian sparkling ale shows best within 3–9 months of packaging. After that it declines in quality rather than becoming unsafe.

No benefit from keeping. Sound for its window and then slowly less good. Nothing bad will happen quickly, but nothing good happens either.

  • Sound well past its window, but nothing in it improves with keeping. Drink it while it is fresh.
  • Bottle-conditioned, so live yeast continues to scavenge oxygen and the beer is more forgiving of time than an equivalent filtered version.

What changes with time

  • Oxidation. Reaction with oxygen, producing wet cardboard and sherry notes in pale beer and dark-fruit depth in strong dark beer. Months to years, depending on packaged oxygen and temperature.
  • Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

How it got here

A South Australian style that survived the near-total conversion of Australian brewing to lager. It is bottle-conditioned, highly carbonated and served with the sediment roused into the beer rather than left behind, and its continuity through the twentieth century makes it one of the few pre-lager colonial ale traditions still commercially brewed.

    Whether naturally conditioned beer has a perceptibly finer carbonation than force-carbonated beer at the same level is disputed; what is not disputed is that bottle-conditioned beer contains live yeast that continues to scavenge oxygen.
