Grodziskie is brewed from 100% oak-smoked wheat malt, hopped assertively for its strength, and carbonated very highly. The combination of low alcohol, high bitterness and smoke is unlike anything else in brewing.
Commercial production ceased entirely in 1993. Its revival from the late 1990s onward was a deliberate reconstruction from surviving records and analyses, not a continuous tradition — which is why BeerHQ marks it historical.
The combination is the point and it needs all three parts: take away the high carbonation and it turns flat and smoky, take away the bitterness and it turns sweet. A good one is astonishingly refreshing for something that smells like a bonfire, and at 2.5–3.5% it is one of the few beers where a genuinely strong flavour arrives at a genuinely low strength.

Freshness and storage
Grodziskie shows best within 2–6 months of packaging. After that it declines in quality rather than becoming unsafe.
Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.
- A delicate beer with a short window. What makes it good is cleanliness and definition, which are the first things to blur.
What changes with time
- Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.
In the package
- Brown glass bottle — No format-specific concerns beyond the general advice above.
- Keg — No light can reach the beer, so lightstrike is impossible in this format.
Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

How it got here
Grodziskie was Poland’s distinctive style: low in strength, made entirely from oak-smoked wheat malt, highly carbonated and served bright. It was widely enough drunk to be a point of national identity.
Production ceased entirely at the end of the twentieth century when the brewery making it closed, and the style existed for over a decade only in record. Its revival was a deliberate reconstruction by Polish brewers and homebrewers working from surviving analyses and recollections rather than from a continuous practice.
1993–2015 Grodziskie dies out and is reconstructed
Poland’s smoked wheat beer ceased production entirely in the 1990s and was reconstructed two decades later from records and surviving knowledge.
