Lichtenhainer is a historical Thuringian wheat beer that combines two things rarely found together: smoked malt and lactic acidity. The smoke is gentle, the sourness moderate, the strength low — it was an everyday drinking beer rather than a specialist one.
It disappeared entirely in the twentieth century and exists now only as a reconstruction. The combination sounds difficult and works better than it reads: the acidity cuts the smoke in a way that keeps the beer refreshing rather than heavy.
For a reconstruction it is unusually easy to assess, because the two characteristics have to be in proportion: smoke without acidity is a weak Rauchbier, acidity without smoke is a Berliner Weisse, and the interest is entirely in the meeting. A good one is light enough that both stay refreshing rather than becoming heavy.

Freshness and storage
Lichtenhainer shows best within 3–9 months of packaging. After that it declines in quality rather than becoming unsafe.
No benefit from keeping. Sound for its window and then slowly less good. Nothing bad will happen quickly, but nothing good happens either.
- Soured during production rather than through a long maturation with a live culture. The acidity itself is stable, but the delicacy around it is not, and keeping the beer does not develop anything new.
What changes with time
- Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.
In the package
- Brown glass bottle — No format-specific concerns beyond the general advice above.
- Keg — No light can reach the beer, so lightstrike is impossible in this format.
Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

- Chlorophenol — A medicinal, sticking-plaster note formed when chlorine meets phenols — almost always a cleaning or water-treatment failure.
- Unintended acidity — Lactic sourness in a style that should not have it — a fault of intent rather than of the organism responsible.
How it got here
A Thuringian wheat beer that was both smoked and lactic-sour, a pairing almost unknown elsewhere. It disappeared from commercial brewing in the twentieth century and is known mainly from period descriptions; occasional modern versions are reconstructions rather than a continuous line.

On Chlorophenol
The medicinal, TCP or plastic character of chlorophenols forms when chlorine or chloramine in brewing water reacts with phenolic compounds from malt and hops, and is preventable by treating the water before use.

On Saccharomyces cerevisiae
Louis Pasteur’s work in the 1860s and 1870s established that fermentation is caused by living microorganisms and that beer spoilage is microbial, which made deliberate control of both possible for the first time.

Lactic acid bacteria spoil beer by acidifying it, by forming haze, and by producing diacetyl — so a contaminated beer often arrives sour, cloudy and buttery together rather than sour alone.
