Where a hop keeps what it gives beer

  1. Bracts and bracteoles. Most of the cone is this: overlapping green scales on a central stem, called the strig. They give the cone its shape and its bulk, and they contribute very little of what you taste.
  2. Lupulin glands. The resin glands clustered at the base of the bracteoles. The alpha acids that become bitterness and the oils that carry aroma are held here, in a small fraction of the cone’s volume — which is why hops are pelletised, why concentrated formats exist, and why oxidation of this small part ruins the whole hop.
Almost everything a hop gives beer is held in the small resin glands at the base of the bracteoles, not in the green material that makes up most of the cone.
