Hop

Dana

A high-alpha Slovenian bittering hop bred from Hallertauer Magnum.

Dana was bred to give Slovenian growers a high-alpha bittering variety with a cleaner aroma than most high-alpha hops manage. It bitters efficiently and contributes a light noble spice rather than the harshness the category is known for.

A practical substitute for Magnum where a Slovenian supply chain is preferred.

How it is used

  • Bittering (early boil). Added at or near the start of the boil, where long exposure isomerises alpha acids into bitterness and drives off aroma.

If you like Dana

Hops with comparable character. Similarity and substitutability are different questions, so each entry says which it is: a hop can smell alike and still change the beer if its alpha acid is far off.

  • Magnum 12–16% alpha

Shares noble spice, floral with Dana; a bittering variety at a comparable alpha acid.

Not the same: lacks the herbal of Dana.

Close enough in both aroma and alpha acid to swap in a recipe.

  • Hallertauer Tradition 5–7% alpha

Shares noble spice, floral, herbal with Dana; an aroma variety though it bitters more gently.

Not the same: 8 points lower in alpha acid, so a like-for-like weight swap would change the bitterness.

Smells alike, but the alpha acid differs enough that a like-for-like swap would change the bitterness.

  • Premiant 7–10% alpha

Shares noble spice, floral, herbal with Dana; a dual-purpose variety though it bitters more gently.

Not the same: 5 points lower in alpha acid, so a like-for-like weight swap would change the bitterness.

Smells alike, but the alpha acid differs enough that a like-for-like swap would change the bitterness.

  • Agnus 9–13% alpha

Shares noble spice, herbal with Dana; a bittering variety though it bitters more gently.

Not the same: brings earth and wood that Dana does not; lacks the floral of Dana.

Smells alike, but the alpha acid differs enough that a like-for-like swap would change the bitterness.

  • Strisselspalt 2–4% alpha

Shares noble spice, floral, herbal with Dana; an aroma variety though it bitters more gently.

Not the same: 11 points lower in alpha acid, so a like-for-like weight swap would change the bitterness.

Smells alike, but the alpha acid differs enough that a like-for-like swap would change the bitterness.
