Sahti sits outside almost every conventional style framework. The mash is filtered through juniper branches in a wooden trough rather than through a grain bed; hops are minimal or absent, with juniper providing flavour and some preservative effect; and fermentation uses baking yeast at warm temperatures, producing enormous banana esters without the fusel harshness that would normally follow.
It is unfiltered, essentially still, and holds protected traditional speciality status in the EU. One of very few genuinely continuous European farmhouse traditions.
It has to be drunk fresh and local — it is unpasteurised, essentially unhopped and therefore has almost no preservative protection, which is why it barely travels. Expect banana from the baking yeast, resinous juniper, a thick unfiltered body and no carbonation to speak of. Nothing else in European brewing tastes like it, and no substitute conveys it.

Freshness and storage
Sahti shows best within 7–30 days of packaging. After that it declines in quality rather than becoming unsafe.
Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.
- Changes quickly enough that freshness is the dominant quality variable.
Traditionally unpasteurised, unfiltered and still fermenting. Intended to be drunk within weeks of brewing.
What changes with time
- Maturation. Intended change that continues after packaging and makes the beer better rather than worse. Weeks to years, depending on the culture and the style.
- Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.
In the package
- Brown glass bottle — No format-specific concerns beyond the general advice above.
- Keg — No light can reach the beer, so lightstrike is impossible in this format.
Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

Characteristics that may be expected here
Each of these is treated as a fault in most beer, and in this style it can be part of the character. Intensity and context decide which: a trace that suits the style and an obvious, dominating version of the same thing are not the same finding. Undercarbonation
Cask-conditioned British ale is deliberately low in carbonation, and sahti is essentially still. What would be flat in a pilsner is correct there. The fault is carbonation below what the style intends, not low carbonation as such.
Faults to watch for
- Infection — Unintended microbial growth — which is a fault only because it was unintended, since the same organisms define lambic.
- Stalled fermentation — Fermentation stopping well short of terminal gravity — leaving a sweet, underdeveloped beer and a package-pressure risk.
How it got here
Sahti is a Finnish farmhouse beer that was never displaced and never had to be reconstructed: it was brewed domestically through the entire period in which industrial brewing replaced farmhouse brewing almost everywhere else in Europe.
Its two defining features are both archaic. The wort is filtered through juniper branches in a wooden trough rather than through a conventional lauter, which contributes resinous character; and it is fermented with baking yeast at warm temperatures, which gives the banana ester character that would be a fault in most styles. It holds EU protected designation status.

On Infection
Packaged beer is a hostile environment for human foodborne pathogens: the combination of ethanol, a pH typically between about 3.8 and 4.6, hop-derived iso-alpha-acids with antibacterial activity, near-absent oxygen and dissolved carbon dioxide means no such pathogen is known to survive and grow in it.

On Infection
The organisms that do spoil beer — chiefly Lactobacillus, Pediococcus and Brettanomyces — are the same organisms deliberately used to produce sour and mixed-fermentation styles, which is why the identical organism is contamination in one brewery and the product in another.

On Undercarbonation
The prickle of a carbonated beer is a chemical sensation rather than a physical one. Dissolved CO₂ is converted to carbonic acid at the oral surface by carbonic anhydrase, and the acid stimulates trigeminal nerve endings — so the bite is felt even when no bubbles form at all.

Before hops became standard, beer was bittered and preserved with mixed herb blends known as gruit, control of which was in several places a taxable monopoly — so the shift to hops had a fiscal dimension as well as a technical one.

On Infection
A compromised package — visible mould at the closure, a pierced or corroded can, a lifted cap or cork — admits organisms the beer’s own chemistry did not exclude, and is the situation in which discarding the beer is the correct response.

Louis Pasteur’s work in the 1860s and 1870s established that fermentation is caused by living microorganisms and that beer spoilage is microbial, which made deliberate control of both possible for the first time.

On Stalled fermentation
The risk in a stalled fermentation is not the flavour but the package. Sugar left unfermented at bottling ferments afterwards, and the CO₂ it produces raises internal pressure in a container that has a rated limit.
