Pale lager

Cold-fermented, cold-conditioned pale beers built on clean malt and hop character, with nothing for yeast flavour to hide behind.

What unites this family

Bottom fermentation at low temperature followed by extended cold conditioning, which suppresses yeast-derived esters and phenols and leaves malt and hops fully exposed. There is nowhere to hide a flaw, which is why these are considered technically demanding to brew well despite tasting simple.

Bottom-fermented (lager). Fermented cool with Saccharomyces pastorianus, which settles out, then conditioned cold. The cooler process suppresses yeast-derived fruitiness, leaving malt and hop character exposed.

This is the most-produced family of beer in the world by a very large margin, and also the most misunderstood: "lager" describes a process, not a flavour, and the family spans a genuinely wide range from a near-flavourless international pale lager to a firmly bitter German Pils or a full, bready Czech premium pale lager.
