Why it matters to beer
Berliner Weisse was Berlin’s everyday beer into the twentieth century, produced by hundreds of breweries. It uses a mixed fermentation of Saccharomyces and Lactobacillus, and was nearly extinct by the 1990s before being revived largely outside Germany.
