Dunkelweizen is a weissbier brewed with Munich and darker wheat malts, so the banana-and-clove yeast character sits over bread crust, light caramel and a faint nuttiness instead of over pale wheat. The two work unusually well together: the malt depth gives the esters something to rest on, and the beer reads richer without gaining much body.
It predates the pale version historically. Pale weissbier is the modern default, and dunkelweizen is closer to what Bavarian wheat beer was for most of its existence — worth knowing when it is presented as a variant rather than as the original.
It rewards fresh drinking more than its colour suggests. The ester and phenol character that makes the style is volatile and fades within months, and what is left is a decent brown wheat beer rather than a dunkelweizen. Pour it the way a weissbier is poured, roused rather than left behind, since the yeast carries a real part of both the body and the aroma.

1. Tilt and pour steadily
Glass at about 45 degrees, bottle to the side of it, poured in one continuous movement. Wheat beer foams readily and a stop-start pour produces a head that is all bubble and no structure.
2. Straighten up and leave a finger behind
Bring the glass upright as it fills and aim for two or three centimetres of head. Stop with roughly a finger of beer still in the bottle — that is where the yeast is.
3. Roll the bottle, then add it
Roll the last of the beer around the base to lift the sediment, and pour it in. The roll comes last because rousing early would mean pouring cloudy beer through a head that has not formed yet. The yeast is part of this style, not an optional extra.

Freshness and storage
Dunkelweizen shows best within 2–4 months of packaging. After that it declines in quality rather than becoming unsafe.
Drink fresh. Buy it as young as you can and drink it soon. What makes this beer worth drinking is the first thing to leave it.
- A delicate beer with a short window. What makes it good is cleanliness and definition, which are the first things to blur.
What changes with time
- Staling. The general, gradual loss of freshness that affects all beer, accelerated sharply by warmth. Months, and roughly twice as fast for every 10 °C warmer.

Old beer tastes worse; it does not become dangerous. Ethanol, low pH, hop compounds and the absence of oxygen make packaged beer hostile to the organisms that cause foodborne illness. The exception is a compromised package — visible mould at the closure, a pierced or rusted can, a lifted cap — which is a reason to discard the beer regardless of its age.

Faults to watch for
- Diacetyl — A buttery compound with a very low threshold — normally a sign of rushed fermentation, but traditional at trace levels in some Czech lagers.
- Acetaldehyde — A green-apple note indicating beer served before fermentation finished — the classic sign of a rushed product.

Whether naturally conditioned beer has a perceptibly finer carbonation than force-carbonated beer at the same level is disputed; what is not disputed is that bottle-conditioned beer contains live yeast that continues to scavenge oxygen.

Acetaldehyde is a normal intermediate in alcoholic fermentation that yeast converts onward to ethanol, so its presence in finished beer generally indicates the beer left the yeast before fermentation and clean-up were complete.

Diacetyl reaches beer by two unrelated routes: as a normal fermentation by-product that healthy yeast subsequently reabsorbs, or from bacterial contamination — chiefly Pediococcus — which produces it continuously and cannot be rested out.
