Why it matters to beer
Grodziskie is brewed entirely from oak-smoked wheat malt, hopped assertively, fermented to a low strength and very highly carbonated. Its extinction and reconstruction make it one of the clearest cases where a modern beer is an interpretation of records rather than a continuous tradition.
