Serving temperature
The temperature a beer is served at, which materially changes how much aroma is perceptible and how sweetness, bitterness and carbonation register.
Cold suppresses aroma and sweetness and accentuates carbonation and crispness, which is why mass-market lager is served very cold and why doing the same to an imperial stout hides most of it.
Rough guidance rather than rules: pale lager and pilsner 3–5 °C, wheat beer and pale ale 6–8 °C, cask bitter and stout 11–13 °C, strong dark and barrel-aged beer 12–14 °C. A degree either way is not a fault, and stated temperatures in beer writing are far more precise than the physiology justifies.
Commonly misunderstood
Precise single figures — "serve at exactly 8 °C" — imply a precision that does not exist. Ranges with reasons are the honest form.
