Copenhagen brewery whose laboratory isolated the first pure brewing yeast culture and gave it away rather than patenting it.
The Carlsberg Laboratory, founded in 1875, is one of the most consequential research institutions in the history of food science. Emil Christian Hansen’s isolation of a single pure yeast strain in 1883 made reproducible lager fermentation possible, and the brewery published the method rather than protecting it.
Why it matters
Pure yeast culture — the foundation of reproducible modern brewing — came out of this brewery’s laboratory and was deliberately shared with the industry.
