Dual-purpose hop
A variety with both enough alpha acid to bitter efficiently and a good enough oil profile to use for aroma.
Most modern American and Southern Hemisphere varieties are dual-purpose, which is why a single hop can carry an entire recipe. Centennial, Simcoe and Citra are all commonly used at both ends of the boil.
