Diastatic power
A malt’s enzyme capacity — how much starch it can convert beyond its own, measured in degrees Lintner or Windisch-Kolbach.
Also called dp, diastatic, lintner.
Base malts have surplus diastatic power; crystal and roasted malts have essentially none, having been kilned hot enough to destroy their enzymes. A grist therefore needs enough base malt to convert both itself and any speciality malt or unmalted adjunct alongside it.
