What is the difference between Helles and Pils?

The short answer

Both are pale German lagers, and the balance is opposite. Helles is malt-led — soft, bready and faintly sweet, with hopping held to around 16–22 IBU. Pils is hop-led — drier, crisper and firmly bitter, with a spicy noble hop aroma.
