What is the difference between Czech and German pilsner?
The short answer
The Czech original is fuller-bodied, slightly sweeter and more golden, with a rounded bitterness and bready malt depth from decoction mashing. German Pils is paler, drier, leaner and more sharply bitter. Water explains much of it: very soft Bohemian water rounds bitterness off, while harder German water sharpens it.
