Wort oxygenation
Dissolve oxygen into cooled wort before pitching, because yeast needs it to build the cell membranes required for healthy growth.

What is actually happening
Yeast uses oxygen to synthesise sterols and unsaturated fatty acids for its cell membranes. Without enough, the population cannot reproduce adequately and the fermentation is slow, stressed and high in fusel alcohols.
This is the one point in the process where oxygen is wanted. Everywhere after it, oxygen is the enemy — which is why the same brewer aerates deliberately at pitching and then guards obsessively against ingress for the rest of the beer’s life.
What goes wrong here
Risks rather than certainties. This step does not cause these faults; getting it wrong can.
- Fusel alcohol — Harsh, solvent-like alcohol heat from fermentation run too warm or under stress — distinct from the pleasant warmth of a strong beer.
- Stalled fermentation — Fermentation stopping well short of terminal gravity — leaving a sweet, underdeveloped beer and a package-pressure risk.
- Acetaldehyde — A green-apple note indicating beer served before fermentation finished — the classic sign of a rushed product.
Questions
Isn’t oxygen bad for beer?
After fermentation, yes — it drives staling and oxidation. Before fermentation it is essential: yeast needs it to build cell membranes, and under-oxygenated wort produces stressed fermentations with harsh fusel alcohols. The two facts are often collapsed into "oxygen is bad", which leads homebrewers to under-aerate.
