Late hopping

Add hops in the last minutes of the boil so their volatile aromatics partly survive, contributing flavour and aroma with limited additional bitterness.

Also called flame-out hopping, aroma addition.

What is actually happening

Hop essential oils are volatile and are stripped by a long boil. Adding hops with only a few minutes remaining leaves too little time for much isomerisation but enough for extraction, so flavour survives.

It remains a compromise: some aroma is still lost. Whirlpool additions and dry hopping preserve more, which is why modern hop-forward brewing leans on those instead.
